Powdered invertase enzyme that degrades sucrose into glucose and fructose. Inverted sugars are obtained, and it sweetens products by enhancing its own sugars. Used to make chocolates with liquid inside. Invertase only works on sucrose: it will only work on products containing sucrose. Directions for use: Mix with sugar or fondant and leave to stand at room temperature or vacuum impregnate the product.
